Dry measurements Dry measurements must be done using the measuring cup pro vided A U or using a set of w eighing scales. Dry measuring must be done by gently spooning ingr edients into the measuring cup and then once f illed, lev elling off with a knife B. T apping a measuring cup will pack the ingredients and you will end up with more than is r equired. This extra amount could affect the balance of the r ecipe. Do not sift the f lour, unless stated. When measuring small amounts of dry or liquid ingredients there ar e two double ended spoons (one for dry ingr edients and one for liq uid) and one single ended spoon (used pr imarily for dry ingredients) C. Measurements must be lev el, not heaped as this small differ ence could throw out the critical balance of the recipe B. Y our breadmak er produces delicious baked goods with ease. This machine req uires only that you car efully follow the r ecipe instructions.A single pr ess of the Increase O button will add 1 0 minutes to the time. T o scroll faster through the time pr ess and hold the button. The total time shown on the screen will include the baking time and delay. F or example, if a loaf takes 3 hours to bake and y ou have dela yed the star t of baking for 5 hours, the screen will countdo wn from 8 hours with the Delay Indicator A showing on the scr een. The dispenser should be filled with one cupful of dry ingredients using the Measuring Cup U provided. The LCD display light will automatically switch off after 20 seconds to conserve po wer when in standb y, keep w ar m and delay time mode. The light will stay on f or 20 seconds. For e xample you may want to f ollow the wholemeal programme (No. 2) but prefer a denser te xture. Y ou can achiev e this by using the Home made pr ogrammes. Y ou hav e the oppor tunity to change the timings of each stage of the process fr om between zer o minutes to 2 hours depending on the stage.

Note, when zer o minutes are selected, that stage of the cy cle will not be par t of the baking programme. The knead 1 cy cle length can be increased or decreased to betw een 6-1 4 minutes b y pressing the Increase O and Decrease ? buttons. Confir m the length of the 1st knead cy cle by pr essing the green tick button O and the Rise 1 symbol will star t flashing. Rise 1 20 minutes appears on the clock as the default time for this stage of the process. Knead 2 1 5 minutes appears on the clock as the default time for this stage of the process. Crust Setting At this stage the clock disappears from the scr een. F or high humidity, add an extra tablespoon of flour if consistency is not right. The dough should form a soft, smooth ball. If too dry, add liquid. Note: this glaz e is only for bread where the dough has been prepar ed in the breadmaker and is then being bak ed in the ov en. The glaze should be applied when the dough is remo ved from the br eadmaker. Do not apply this glaze to doughs in the breadmak er. Melted butter crust Brush melted butter over just bak ed bread for a softer, tender crust. Milk glaze F or a softer, shiny crust, br ush just baked br ead with milk or cream. Sweet icing glaze Mix 1 cup sifted icing sugar with 1 to 2 tablespoons of milk to make a glaz e consistency and drizzle over raisin br ead or sweet breads. Self-raising flour Self-raising Flour contains unnecessary leav ening ingredients that will inter fer e with bread and cake making. It is not recommended f or use. They are often added in small quantities to bread f or nutr itional enrichment, hear tiness and f lav our. They ar e also used to enhance the textur e of bread. Oatmeal Oatmeal comes fr om rolled or steel-cut oats. They ar e used primar ily to enhance flavour and te xture. Y easts (active dry yeast) Y east through a f er mentation process pr oduces gas (carbon dioxide) necessary to mak e the bread rise. Y east must be able to feed on sugar and flour carbohy drates in order to produce this gas. F ast action granular yeast is used in all r ecipes that call for y east. There ar e three differ ent types of yeast available: fr esh, traditional dry active, and fast action.

It is r ecommended that fast action yeast be used. F resh or compr essed cake yeast is not recommended as they will pr oduce poor results. Store y east according to manufactur ers instr uctions. Ensure y o ur yeast is fresh b y checking its e xpiration date. Once a package or can of yeast is opened it is important that the remaining contents be immediately resealed and r efr igerated as soon as possible for future use. Often br ead or dough, which fails to r ise is due to stale yeast being used. The following test can be used to determine whether your yeast is stale and inactiv e: 1 Place half a cup of lukew ar m water into a small bo wl or cup. 2 Stir 1 tsp. of sugar into the w ater then spr inkle 2 tsp.If this does not occur, discar d mixture and star t again with another packet of dried yeast. Sugar Sugar is impor tant for the colour and flav our of breads. It is also food f or the yeast as it is par t of the fermentation process. Ar tificial sweeteners cannot be used as a substitute for sugar as the yeast will not r eact properly with them. Salt Salt is necessary to balance the flavour of br eads and cakes, as well as f or the cr ust colour that dev elops dur ing baking. Salt also limits the gro wth of yeast so the amounts shown in the recipes should not be incr eased. For dietary r easons it may be reduced, ho wev er, your baking may suff er. Milk will impro ve flavour, provide a v elvety textur e and soften the crust, while water alone will pr oduce a cr ispier crust. Some liquids call for juice (orange, apple, etc) to be added as a flavour enhancer. Note: F or most recipes we suggest the use of dry (po wdered) skimmed milk. Eggs Eggs add richness and a velvety te xture to bread doughs and cakes. Butter or margarine can be used as a substitute. If butter or mar gar ine is used direct fr om the refrigerator it should be softened f irst for easier blending during the mixing cycle. Baking powder Baking pow der is a raising agent used in cakes.
