That canner is inherently unsafe and not really hard to figure out, that you cannot do so means that you really do not understand the danger that design poses. Martin They didnt have gasket. But they were older and cast aluminum. This looks like a more modern one made of stamped aluminum. And it has a tall top. If memory serves, there were some sold under Burpee name that looked like this. I have no personal experience with them but think they were well liked. When I've bought either canner or cooker, I set them up with both a modern replacement jiggler AND a gauge. The jiggler lets you know if the gauge is working properly and the gauge is a check on the jiggler in case it gets plugged up. By way you dont need to get an official genuine factory replacement gauge if you replace it. But I have even added a gauge to a modern stainless Manttra cooker I got really cheap. Seriously I think having a gauge in addition to whatever kind pressure regulator is a valuable safety plus. By way testing a gauge is never bad, but have seen relatively few gauges off more than a pound or two unless really old, abused, and rusted. Age seems to affect everything. It really helps so much. For those that want both gauge and jiggler and dont have spare threaded bung as most pressure cookers from recent decades had jiggler only. You make hole add appropriate size brass or stainless bulkhead fitting using rubber washer so it seals air tight. Screw the gauge into that. You pay full retail for bulkhead fitting and it can be bit pricey. Here is example nearly identical, like one I used.I prefer the fixed weight for cooking and the variable weight for canning. I've always referred to this as a 'cooker' because that is how I've always used it. I bought it used in the box. The manual was not with it. I have looked online and discovered it is also a canner. One piece weight means no rings to keep track of. The Presto weight is pot metal. Saying that I actually like the gentle rocking of the Presto jiggler over the sort of stuttering of the Mirro jiggler. And there are other brands that do other weird stuff, spin, whistle, and who knows what. I hate the ones that sit there and then suddenly come violently to life in a mini explosion of steam. Dont need a heart attack. The Presto weight will eventually get so it doesnt do the rocking.
If you can clean corrosion out of the hole with nail or ice pick or such, it will usually start working again. If not you get to replace it. The Mirro weight doesnt corrode, its pretty much lifetime design. So even if the Mirro weight gets to looking like it went through WWII battlefield use, it will be functional. Also be aware of what you are buying. Many sell the jiggler weight separate from the vent stem it sets on. If you are converting a gauge only cooker, or putting different brand jiggler system on your cooker, you need both the vent stem and the weight. The stem and weight have to be made for each other. Cant use a Mirro weight on Presto stem for example, nor vice versa. The older AA had a dial gauge and a steam petcock. The daughter asked for it this spring so I'm saving my pennies for another AA. I need to decide if I want another 915 or if I should go with a 921. The 921 will just fit under the microwave and holds 9 more pints than the 915. What I'm concerned about is the weight difference. I'm still nervous. So, knowing a fear is irrational isn't always enough, I guess. Would those of you who have successfully survived pressure canning make some suggestions as to make and size. I'm tending towards a smaller 10-12 quarts. Thoughts welcome, and much appreciated:) My daughter uses her pressure cooker all the time, even cans chicken broth and meatballs. She didn't grow up with the stories I did and has no fear. Talking with her has encouraged me to take the plunge. Anyway Laura has two, both by Presto. Presto seems to be the good affordable brand now days. Her smaller 8 quart size is stainless steel and she uses it for fast cooking beans, roasts, etc. The larger pot is Presto Pressure Canner 23 Quart she only uses it for canning. She says the smaller doesn't have a pressure gauge and so you pretty much have to hope you have reached the proper pressure for canning without it. The large canner has the gauge so it removes the guess work. I'll probably go with the Presto 16 quart because it appears to be the smallest size with a pressure gauge. That's normal and means the rubber ring is doing it's job of sealing. After WWII munitions makers had to find a new line of business. Some of them turned to making pressure cookers and canners. But today's cookers and canners have all kinds of safety features. Lids don't blow off any more and today's canners don't explode. That doesn't mean you should wander off to the grocery store while you're canning. You need to keep an eye out and monitor, but it's mainly to assure a quality product, nothing more.
I have an All-American and a Mirro, so I have experience with all three of the current brands. The first thing to be aware of is a pressure cooker is not a pressure canner. To be a canner it needs to be large enough to contain 4 one-quart jars. If you try to use something smaller for canning, the total time to come up to heat and cool down will be too brief and the total processing time won't be sufficient to assure safety. That's a huge issue when you're canning meat or green beans. It's the botulism special. The best value in canning today is the Presto 23-quart. If you buy a Presto go to the company site and order a three-piece weight. (Or another website - it's available.) Here it is at Goodman's: The gauge on the Presto is cheap and needs to be tested for reliability. Unfortunately, it's getting harder and harder to find Extension services that offer that service. It's easier to buy the 5-10-15 pound weight so you have that to rely on and can just use the gauge as a visual indicated. The one thing about the Presto is it is thinner. If you have one of the higher BTU Wolf ranges, for example, you have to be careful not to turn the burner up too high and overheat it. The manual gives the limitations. Also, on an electric coil range, you may want to order a canning burner, which sits higher, can handle more weight and is generally better for pressure canners and boiling water bath. Just be sure it's compatible with your brand and model of stove. The All-American is the Rolls Royce of pressure canners. It doesn't have a seal (gasket) and is heavier than the Presto. It also comes with a three-part weight and uses the gauge as backup. I'd call it more intimidating. However, if safety or consistent results are your concern, it's not possible to do better. I don't like Mirro, so I can't be fair on that one. A friend gave me one she'd never used, so I have it but I wouldn't otherwise.
It lacks a gauge and I'm oriented to that as a visual guide, even though I use the machined weight as the main indicator. It sounds different and it's just not as comfortable for me to use. But mainly the issue is it costs more than the Presto and I just don't see the value. Presto has been around forever. I'm guessing you will be able to buy Presto and All-American parts as long as you live. I'm not so sure about Mirro. It's definitely a minority player in the market. Whichever you buy, do check this site and its instructions. The pressure canner companies don't update their manuals so while you can trust what your manual says in terms of how much water to add, etc.I hope this helps. joy112854 Tomatoes can be pressure canned but they can also be boiling water bathed and for that all you need is a big pot with a lid and some kind of rack inside to hold the jars off the bottom. So if you have a big kettle and it holds enough water to cover your pints by at least 1-2 inches, you're good to go. If it doesn't have a rack you can wire canning rings together, use a cake rack or even put a towel on the bottom. A wet towel is messy but it will do the job. The 10-quart would be too small. I have a 10-quart and there's no way it would accomodate four quart jars. I've already mentioned the problem with a too-small pressure canner. I looked at the Heartland America description, but it doesn't seem to add up. The picture they show is a Fagor, which is not electric. The 5-piece set they describe is the 10-quart pressure cooker, an alternate tempered glass lid for conventional cooking, a steamer basket and a manual.
